Best white sashimi options


Im currently in a fishermen town in Portugal, theres a fish market in which the fish are all fish that were swimming earlier in the morning, im trying to experiment with a fish the i dont know.

Usually my easy go to when making sushi and slicing sashimi is Hamachi, as of now, i didnt find Hamachi, so im looking for an alternative

Looked at the following:
Carapau – Horse mackerel (big ones)
Dourada – golden bream
Robalo – sea bass
Pargo – red snapper
Corvina – european meagre / croaker
Espadarte – sword fish

Added some pics if you have any ideas for other fish

Also bought the toro tuna, any recommendations what should i do with it? Never had a chance to buy one in my local market

  1. Dorade makes an excellent substitute for Madai.

    Turbot is excellent too, has copious amounts of engawa.

  2. Lot of beautiful fish there, but that kinmedai/splendid alfonsino definitely caught my eye. I also love me some aji/horse mackerel (though not a whitefish).

  3. There are a few places that make an amazing sardine sashimi (they just score and get some Maillard reaction on the top of the skin).

    But I’d say dourada or corvina are pretty good (had both).
