Zwilling stainless is pretty top tier. I’ve been using my pots since 2018 and would recommend them. Similar to All-Clad and Le Creuset in terms of build quality, but somewhat cheaper.

What’s your budget like? They often go on sale during New Years, and many of the outlet parks will have a discounted version, “passion series”(Zwilling is the “premium” brand for Henckels).
These will last you the rest of your life, but you don’t necessarily need to buy them all at the same time. You can just get a few pieces here and there.
Tfal has good stainless. Lids are pretty bad though.

I really like my Hexclads. I also have a set of AllClad stainless steel pots and pans which are fantastic when you don’t need the anti-stick properties of the Hexclads.
I have both IH and gas. I prefer cast iron stuff. You’ll never have to buy them again
I like Cuisinart’s stainless steel set, but it’s not non-stick, so you have to know how to use it or to use an additional small pan just for fried eggs and similar.
On the positive side, they last forever and you can use metal utensils with them.
